ASIAN STYLE BROCCOLI SALAD- like regular broccoli salad, just way better💁🏻‍♀️🥦

Obviously we’ve got broccoli but we added crunchy edamame and peanuts, a little chili spice🌶 and then we generously drizzled it with the BEST peanut sauce that is creamy and flavorful and made with no mayo🙅🏻‍♀️ Plus it’s all so easy to whip together so it’s great for an easy side dish on a busy week night or to bring over for dinner with friends! SALAD:
•5 cups broccoli florets
•3/4 cup shelled edamame
•1 red Thai chili pepper
•3/4 cup matchstick carrots
•1/4 cup raw peanuts

PEANUT SAUCE:
•1/3 cup nut butter
•2 tbsp tamari
•1/2 tbsp sesame oil
•2 tbsp maple syrup
•1 tbsp almond milk
•1/4 tsp apple cider vinegar
•1/4 tsp ginger
•cayenne (optional)
•sesame seeds to garnish

HOW TO:
1. Blanch your broccoli- bring a large pot of water to a boil and broccoli and cook two minutes. Immediately strain and drop broccoli in ice water (stops cooking process). Strain, pat dry, and put in a large mixing bowl.
2. Dice pepper and add remaining salad ingredients to bowl.
3. In a small mixing bowl whisk together the dressing ingredients until combined. Can add more milk to make it thinner if you want.
4. Pour dressing on top of salad and garnish with sesame seeds.
